Chef Dawn's Bloody Mary Chicken Wings

If you're a fan of chicken wings and love a spicy kick, then Chef Dawn's Spicy Bloody Mary Chicken Wings are the perfect recipe for you. Using her signature Bloody Mary spice mix, these wings are sure to pack a flavorful punch that will have your taste buds dancing. And to ensure that the wings are perfectly cooked and juicy, Chef Dawn recommends using the Electrolux Skyline Combi Oven. So fire up your oven, grab your favorite beverage, and get ready to enjoy some delicious and spicy chicken wings!



Ingredients:

3 lb. chicken wings 1 tbsp. vegetable oil 1 tbsp. chef Dawns' Spicy Bloody Mary Mix 3 c. tomato juice 2/3 c. vodka 3/4 c. brown sugar 1/3 c. Hot sauce, such as Tabasco Juice of 1 lemon kosher salt Freshly ground black pepper


 

Chef Dawn's Instructions:

  1. Preheat oven to 425. In a large bowl, drizzle wings with oil. Season with celery salt and black pepper and set aside.

  2. In another large bowl, combine tomato juice, vodka, brown sugar, hot sauce, seasoning salt and lemon juice. Whisk until fully incorporated and season with salt and pepper.

  3. Pour bloody Mary mixture over wings until they are fully submerged, reserving some to reduce. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least an hour.

  4. Place the wings on a large baking sheet. Roast 45 minutes, or until golden and crispy

  5. Meanwhile, in a small saucepan over medium heat, add marinade. Bring to a simmer and cover until reduced by half.

  6. When wings are ready, brush them with the thickened sauce and broil on high for 3-5 minutes.


 

Cooking Instructions using the Skyline Combi Oven from Electrolux Professional



1. Set combi to wing program. (Stage 1- 212, 100% humidity, 10:00, fan speed 3. Stage 2- 410, vent open, 15:00, fan 6). 2. Pour bloody Mary mixture over wings until they are fully submerged, reserving some to reduce. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least an hour. 3. Place chicken wings in air frying basket. 4. Once the oven is preheated, add wings to the combi. 5. Allow the combi to run it’s entire cycle. 6. Meanwhile, in a smallsaucepan over medium heat, add marinade. Bring to a simmer and cover untilreduced by half. When wings are ready, brush them with the thickened sauce and broil on high for 3-5 minutes.
